This recipe is very healthy in terms of lower salt and fat content (no crust)
and can be made with or without meat. Meats used can be pork, bacon, turkey
breast, or chicken. I prefer cooked turkey breast.
You will need:
bottom layer items
2 large portobella mushroom heads, chopped into 1/4" pieces
1/2 cup chopped sweet onion
1/3 cup avocado or other high-heat oil
2 tbsp. soy sauce
pepper and garlic salt to taste
2 pods garlic, crushed
3 strips turkey bacon, cured
4 large sundried tomato pieces, chopped to strips or pieces
6 large eggs and 10 egg whites (liquid carton used for egg whites)
1 cup veggies, (preferably already stir fried or cooked)
turkey breast cubes (actually any meat optional, such as pork, bacon pieces, chicken, etc)
1/2 cup cream or half and half
.25 lb. (4 0z) feta cheese crumbled
2 cups shredded cheddar cheese
aged parmesan cheese
In a large, deep-dish frying pan with tight-fitting lid, stir fry all the bottom layer ingredients in pan until a little crispy.
Whip eggs and cream
pour over bottom layer items carefully, keeping the consistent layer intact.
cook on medium for about 5 minutes until eggs have slightly congealed.
Fold in veggies, meats, and feta cheese by sprinkling on top of the eggs, then taking a spatula and pressing them down into the mixture. Layering is the key.
Cover with cheddar cheese and sprinkle top with parmesan.
Turn heat down low and put lid on tight, "baking" the mixture until a fork comes out without runny egg on it.
Turn off heat and let it continue to cook internally with lid on.
Serves 8 neighbors, or 4 surfers.
Can be made vegetarian by just cutting out all meat.
Favorite substitutions or additions for veggies are artichoke hearts, spinach, brussel sprouts and broccoli. MAKE SURE water is drained or pressed out to keep from making the omelette soggy.
